Curried lamb patties

Serves:4

Ingredients

  • 750 g lamb mince
  • salt and freshly ground black pepper
  • 1/2 tsp turmeric, ground
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 Hot bird's eye chilli, seeds removed and finely chopped
  • 1 onion, peeled and finely chopped
  • salt and freshly ground black pepper
  • 4 tbsp olive oil
  • 2 limes, juiced
  • 4 tbsp fresh coriander, chopped
  • 1/2 red onion, diced
  • 1 red pepper, cored and diced
  • 1 mango, peeled and diced

Cooking Instructions

  1. Combine all the salsa ingredients, season and mix well to combine.
  2. Combine all the lamb pattie ingredients in a bowl, season and mix to combine.
  3. Handling the meat as lightly as possible to avoid compressing it too much, shape it into 4 patties.
  4. Heat a large frying pan over a medium heat for 2 – 3 minutes, then add the patties and cook, undisturbed, for 3 minutes for medium. Turn over to cook the other side for another 3 minutes.
  5. Serve the lamb patties with the fresh mango salsa.
