Curried lamb patties

Ingredients
- 750 g lamb mince
- salt and freshly ground black pepper
- 1/2 tsp turmeric, ground
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 Hot bird's eye chilli, seeds removed and finely chopped
- 1 onion, peeled and finely chopped
- salt and freshly ground black pepper
- 4 tbsp olive oil
- 2 limes, juiced
- 4 tbsp fresh coriander, chopped
- 1/2 red onion, diced
- 1 red pepper, cored and diced
- 1 mango, peeled and diced

Cooking Instructions
- Combine all the salsa ingredients, season and mix well to combine.
- Combine all the lamb pattie ingredients in a bowl, season and mix to combine.
- Handling the meat as lightly as possible to avoid compressing it too much, shape it into 4 patties.
- Heat a large frying pan over a medium heat for 2 – 3 minutes, then add the patties and cook, undisturbed, for 3 minutes for medium. Turn over to cook the other side for another 3 minutes.
- Serve the lamb patties with the fresh mango salsa.
