This cheat’s chicken breyani is beyond delicious
There are few dishes with a following quite like a proper chicken breyani, but how many of us are brave enough to attempt it? Which is why we bring you this cheat’s breyani – it’s absolutely delicious, and it can be yours in under an hour.
Ingredients:
- Ghee, 3 T
- Woolworths Vindaloo Curry Paste, 1 T
- Woolworths Breyani Spice, 2 T
- Free range chicken portions 900 g
- Woolworths Curry Leaves, a handful
- Woolworths Heat & Eat Breyani Rice, 3 x 250 g sachets
- Fresh turmeric, 1 T grated
- Garlic, 1 T crushed
- Fresh ginger, 1 T grated
- Chilli 1 T, crushed
- Woolworths Breyani Spice, 2 T
- Saffron, a pinch
- Red onion, sliced, for serving
- Fresh coriander, for serving
Method:
- Preheat the oven to 200°C. Melt 2 T ghee and stir in the curry paste. Pour over the chicken and toss to coat. Arrange in a baking dish with a few curry leaves and roast for 40 minutes, or until cooked through.
- Heat the remaining ghee over a medium heat on a separate pan. Add the turmeric, garlic, ginger, chilli, breyani spice and saffron. Fry until fragrant. Add the rice and fry for 10 minutes.
- Serve with the chicken, red onions and coriander. Pour over the chicken pan juices.
