These are the ultimate make-ahead braai sides

Say hello to your new favourite braai sides. No more wilted salad or pasta here, these sides are packed with flavour and are sure to leave your guests coming back for more.

No-wilt marinated salad

Easy 
Serves: 6
Preparation time: 20 minutes
Cooking time: 15 minutes

Ingredients:

  • 340 g jar Woolworths Roasted Red Peppers in Brine
  • 1 red onion, cut into petals
  • 70 g Woolworths Pitted Green Olives with a Hint of Basil & Garlic
  • 50 g Woolworths Basil & White Balsamic Dressing
  • Salt and pepper, to season
  • 2 T olive oil

For the braai:

  • Woolworths Snacking Peppers
  • 600 g Woolworths Exotic Tomatoes
  • Woolworths Garlic Filled Baguette, warmed
  • Freshly torn basil, to serve

Cooking instructions:

  1. In a bowl, combine the roasted red peppers, onions, olives, dressing and salt and pepper and give it a good mix. Toss together and allow to marinade for 1–2 hours, allowing the flavours to infuse.
  2. Char the snacking peppers over a medium flame until caramelised. 
  3. In a skillet over medium flames, add the tomatoes, peppers and olive oil and allow to sizzle. 
  4. Remove from the heat and toss into the marinated salad. 
  5. Tear apart the garlic filled baguette slices and toast over the fire to make instant garlic croutons. 
  6. Load salad onto a platter and top with croutons and basil before serving.

Loaded coal-roasted jacket potatoes:

Serves: 6
Preparation time: 5 minutes
Cooking time: 1 hour

Ingredients:

  • 8 – 12 Woolworths Everyday Large Potatoes
  • 3 T Olive Oil
  • Salt and pepper, to season
  • 2 T Woolworths Braai Seasoning
  • 2 T Woolworths Fresh Rosemary

To serve:

  • Woolworths  Sour Cream
  • Woolworths  Chilli Flakes
  • Woolworths Red Salad Onions, sliced
  • Parmesan, grated

Cooking instructions:

  1. Poke the potatoes all over with a small sharp knife and microwave for 10 – 12 minutes until a knife can pierce them easily without falling apart. 
  2. Toss the potatoes in olive oil, seasoning, spice and rosemary. Wrap in foil and bake in coals for 40 minutes to an hour, turning often until they are dark golden in colour. 
  3. Load up your potatoes with sour cream, chilli flakes, sliced salad onions and grated parmesan. 
  4. Serve immediately and enjoy!  
     

Mint mojito and strawberry ice lollies

Easy 
Serves: 6
Preparation time: 5 minutes
Freezing time: Overnight

Ingredients:

  • 3 x Woolworths Sparkling Lime & Mint Flavoured Drink
  • Woolworths Fresh Strawberries, sliced
  • Woolworths Fresh Mint sprigs, to garnish

Cooking instructions:

  1. Add a few sliced strawberries into your favourite lolly moulds and add in a fresh sprig of mint.
  2. Top up with the delicious mint mojito mix and freeze overnight
  3. Serve as the end to the perfect braai!
