Easy chicken casserole with ALL the citrus

The secret to a quick and delicious, zesty chicken casserole? Season and squeeze. Squeeze over all the best of winter citrus fruit, that is. It’s a match made in heaven.

Method:

First, we marinate the chicken: To a roasting dish, add citrus halves of your choice, plus 3–4 cloves of garlic and a few sprigs of rosemary. Arrange free range chicken portions to the dish, drizzle with olive oil and squeeze over the juice of 2 oranges (or ClemenGold® juice) and the juice of two ruby grapefruits. Season with salt and pepper. Set aside to marinate for an hour. Preheat the oven to 200°C. Heat olive oil in a non-stick pan and brown the chicken portions. Finish in the oven until cooked through and golden, basting with the citrus marinade.
