Rainbow Trout (Oncorhynchus mykiss)

Description
Rainbow trout (Oncorhynchus mykiss) is easily recognised by the pink-red stripeon its sides. It can live in both fresh and marine waters. Rainbow trout was introduced to Southern Africa in the 1890s and has been farmed here since the early 1960s. Rainbow trout are torpedo-shaped and deep-bodied with a maximum recorded length of 1.2m

Origin
The vast majority of rainbow trout sold at Woolworths originates from two net pen farms located in the Katse Dam in the Lesotho Highlands. To ensure a consistent supply of trout, Woolworths also occasionally imports trout grown in the fjords of Norway.

Attributes
Rainbow trout flesh is tender, flaky and soft. It has a sweet, nutty flavour and low to medium oiliness. It is abundant in omega-3 fatty acids and is also packed with vitamin B12, selenium and antioxidants.

Cooking
Rainbow trout tastes delicious and is simple to prepare. It is ideal for grilling and baking. Try it with a little butter, lemon and parsley to bring out the delicate flavours of this fish. Hot and cold smoked trout is a succulent delight.

Rainbow trout is one of the most efficient fish to farm, with low feed conversion ratios and high yields. All the farms from which we source trout have been independently certified as sustainable by either the Best Aquaculture Practices or GlobalG.A.P. aquaculture certification programmes.
