What better way to start a meal than with an abundant antipasti platter?

Antipasti stretches back to medieval times in Italy, when diners would mingle over sweet and savoury finger foods. Typically served before the meal, early recipes included everything from sugared nuts and clotted cream to cured meats and spiced hams. Over the centuries, antipasti has become the domain of restaurants, with an artfully arranged array of colourful stuffed, marinated, roasted and grilled vegetables, meat and fish.

Here are some tips to perfect the art of antipasti: 

  1. Think sumptuous ruffles of prosciutto and salami or ribbons of salmon and trout, olives, marinated artichokes, chunks of Parmesan, fresh mozzarella and ricotta and anything else that catches your fancy on a platter. 
  2. Add some fresh crusty bread - our heat and eat ciabatta is the perfect cheat. It's quick and easy to prepare and the result is a mouth-watering, fresh, crusty loaf. 
  3. Get creative by adding texture to the platter with delicious treats like nuts, figs, tapenade, seasonal fruit and vegetables for a pop of colour. 

All that's left is to add wine and enjoy!
