Try this simple but super oxtail bredie

Always been intimidated by the thought of making a proper tomato bredie? Now’s your chance with this easy recipe. Add the ingredients and let it simmer happily on the stove for a couple of hours while you get on with other things. This is simple slow-cooking at its best.

Ingredients:

  • 1 kg oxtail
  • 1 kg ripe tomatoes, blanched to remove the skin
  • 800 g chopped tinned tomatoes
  • 2 large onions
  • 2 large sweet potatoes, sliced
  • Salt and fresh ground black pepper
  • Brown sugar to taste
  • Basil (optional), to taste
  • Tomato paste to thicken, if needed

Method:

  • Heat the oil in a large saucepan and brown the oxtail.
  • Remove from the pan and fry the onions until soft.
  • Add tomatoes https://www.woolworths.co.za/prod/Food/Fruit-Vegetables-Salads/Salads-Herbs/Tomatoes/Israeli-Tomatoes-6Pk/_/A-20003951, salt and pepper and oxtail. Cook covered, on a low heat for 3 hours (or in the oven at 120°C). Sweeten with sugar to taste if needed.
  • Add sweet potatoes and cook for 30 minutes. Add 1-2 T tomato paste to thicken if the gravy needs it.
  • Serve with rice and garnish with basil (optional). (Recipe by Lilian Fester)
