Bring some zest into your life this winter with these 3 delicious LemonGold® recipes. From an update on lemon water (make and freeze lemon water cubes ahead!) to lemon gummies and lemony whipped ricotta, they’re all bound to add some sunshine to any wintery day.

Easy lemon water ice cubes

Easy
Prep time: 10 minutes, including freezing time

INGREDIENTS

  • LemonGold® juice and zest    
  • Fresh turmeric, to taste    
  • Rooibos tea    
  • Fresh ginger, to taste    
  • Honey, to taste    
  • Fresh thyme, to taste    

METHOD:

  1. Brew a pot of rooibos tea and infuse with LemonGold® juice and honey, to taste. 
  2. Add pieces of peeled and sliced turmeric and ginger to the trays, along with LemonGold® peel and fresh thyme. Top with infused rooibos tea and more water if needed. 
  3. Freeze overnight. For a warming cup of fragrant LemonGold® water, simply add a block or two to a heat-proof glass or cup and top with boiling water. This can also be enjoyed with sparkling water as a refreshing drink in spring and summer.

Lemony whipped feta

Easy
Serves 4
Prep time: 15 minutes

INGREDIENTS    

250 g crumbly feta    
90 g cream cheese    
1 T olive oil    
1 T LemonGold® zest    
1 t smoked chilli flakes (optional)    
Ciabatta, toasted, for serving    
Fresh herbs, for serving    

METHOD

  1. Place the feta, cream cheese and olive oil in a blender or food processor. Blend until smooth and creamy. Add the LemonGold® zest and chilli, flakes if using.
  2. Spread onto toasted ciabatta, drizzle with olive oil and serve a squeeze of LemonGold® and fresh herbs.

3-ingredient lemon gummies

Easy
Makes 20–24
Prep time: 10 minutes, plus time to chill
Cooking time: 3 minutes

INGREDIENTS

2 x 10 g sachets gelatine powder    
50 g sugar    
Caster sugar, for dusting    
1 cup water    
⅓ cup LemonGold® juice    
LemonGold® seedless lemon zest, for dusting    

METHOD

  1. Bloom the gelatine in 2 T warm water.
  2. Meanwhile, heat the remaining water and the sugar in a saucepan until dissolved. Allow to cool, then add the LemonGold® juice and bloomed gelatine. Mix until well combined.
  3. Pour the mixture into a silicone ice tray and chill until set. Once set, unmould the gummies using a spatula and roll in the caster sugar mixed with the lemon zest.
