Try this spicy bean fajita on for size

In the mood for a meat-free fajita? No problem – try this delicious plant-based fajita on for size. Brimming with fresh, spicy flavours, it’s sure to hit the spot.

INGREDIENTS:

  • Crushed turmeric: 1 teaspoon
  • Tahini paste: 2 tablespoons
  • Honey: 1 teaspoon
  • Garlic: 1 clove, crushed
  • Lemon juice: 2 tablespoons
  • Extra virgin olive oil: 2 tablespoons
  • Salt, to season
  • Woolworths Ancient Grain Wraps: 6
  • Halloumi or tofu: 400 g, cut into large cubes
  • Olive oil
  • Cannellini beans: 400 g, drained
  • Black beans: 400 g drained
  • Baby cucumbers: 6, sliced lengthwise
  • Green skin avocados: 2
  • Jalapenos: sliced, to serve

METHOD:

  1. For the dressing, mix the turmeric, tahini, honey and garlic until combined. Slowly add the olive oil, add some lemon juice to taste. Season with salt and pepper.
  2. Toast the wraps in a pan on high heat until toasted on each side.
  3. Fry the halloumi pieces in some olive oil until golden and crispy on both sides.
  4. Strain the beans and toss in a little olive oil.
  5. To assemble, spoon some beans on the toasted wrap and add a few halloumi pieces.
  6. Add some cucumber slices on top with some avocado and sliced jalapeno.
