You have to try this chocolate Chuckles cake

We made this chocolate cake with the sole intent to LOAD it with all of the Chuckles. (And we are so OK with that.)

Ingredients:

  • 280 g flour
  • 2 tsp bicarbonate of soda
  • ½ tsp salt
  • 115 g butter
  • 100 g white sugar
  • 100 g brown sugar
  • 3 free range eggs
  • 1 tbsp vanilla extract
  • 1 cup buttermilk
  • 100 g 70% dark chocolate, melted
  • 1 cup espresso
  • Chuckles Puffs

Method:

  1. Preheat the oven to 180°C and grease 2 x 20 cm springform cake tins.
  2. Sift the flour, bicarbonate of soda and salt into a bowl. Using an electric beater, cream the butter and sugar until light and fluffy.
  3. Add the eggs, vanilla and buttermilk to the sugar mixture and beat until well incorporated. Mix in the chocolate and coffee.
  4. Gently fold in the dry ingredients and pour into the cake tins. Bake for 30 minutes, then set aside to cool.
  5. Spread over your favourite chocolate icing or ganache, or even the contents of a jar of Nutella. Top with assorted Woolworths chuckles and serve.
