You have to try this egg roll for breakfast

If there’s one thing you’re allowed to enjoy on a long weekend, it’s an indulgent breakfast. This fluffy foldover-style breakfast egg roll fits the bill perfectly.

The ultimate brekkie egg roll

Serves 4
Preparation: 15 minutes 
Cooking: 20 minutes

Ingredients:

  • 3 T olive oil
  • 120 g mature Cheddar, grated 
  • 4 Woolworths Ultimate Burger rolls, halved 
  • 8 large free-range eggs
  • 8 rashers streaky crispy bacon, cooked
  • Fresh watercress, for serving 
     

Method:

  1. Heat a little olive oil in a non-stick pan. Sprinkle 30 g grated cheese into the pan and then place the top part of a roll onto the cheese. Allow the pan to get hot so the cheese melts and sticks to the roll. Carefully remove from the pan and allow to cool so the cheese sets to the roll like a grilled cheese. Repeat with the remaining cheese and buns. 
  2. Beat the eggs until fluffy. It’s best to do these 2 eggs at a time and make individual portions for each roll; this way you ensure they stay light and are cooked to perfection. 
  3. Add more olive oil to a non-stick pan and add the eggs. Cook until they start to set slightly. Fold the eggs as you would an omelette, working quickly as the pan is hot. 
  4. Keep folding for about 10 seconds. Flip over once or twice to make an envelope and place on the buns with the crispy bacon and watercress.
