Pork ribs & spiced mozzarella toasties on the grill

Pork ribs & spiced mozzarella toasties

Preparation time: 15 minutes 
Cooking time: 25 minutes 

Ingredients:

  • Woolies Sweet & Sticky Pork Loin Ribs 1 kg
  • 360 g garlic butter-filled ciabatta 
  • 4 T mayonnaise
  • 100 g Jalapeno atchar
  • 250 g grated mozzarella 
  • Salt to taste 
  • Pepper to taste 
  • 2 ripe and ready avocados 
  • 200 g x 1 freshly smashed spicy jalapeño avo 
  • 1 pineapple, sliced into quarters down the middle 
  • 2 limes

For the salad:

  • 3 T olive oil 
  • 3 T wholegrain mustard 
  • Zest and juice of 2 lemons 
  • 80 g sugar snap peas  
  • 80 g mange tout 
  • 120 g petit pois 
  • 180 g sheep & goat’s milk feta 
  • Salt and pepper to taste

Method:

  1. Prepare and grill the ribs as per packaging instructions. 
  2. While they are on the braai, prepare the grilled mozzarella toasties by cutting the garlic bread all the way through. Spread mayonnaise on the outside of each piece of bread, spread the atchar on the inside and top with mozzarella. Season, put the toasties in a braai grid and cook until melty and caramelized. 
  3. Cut the avocados in half, grill on the braai and fill with spicy guacamole. 
  4. Grill the pineapples on the braai and finish off with lime juice. 
  5. For the salad, combine the olive oil, whole grain mustard and zest and juice of the lemons and toss through the greens. Top with feta and season to taste.
