Summer bolognese

Ingredients
- 2 garlic cloves, chopped
- 250 g bacon, chopped
- 1.5 kg Roma tomatoes
- 200 g cherry tomatoes, halved
- salt and pepper
- 400 g Woolworths baby marrow spaghetti
- 100 g raw flaked almonds
- 200 ml Good-quality lamb stock
- 45 ml tomato paste
- 500 g lamb mince
- 1 large onion, finely chopped
- 45 ml canola oil
- 3 sprigs thyme

Cooking Instructions
- Slice tomatoes in half and then add to the blender along with thyme.
- Place in blender and blitz until pureed.
- Put through sieve to remove skin and pulp.Set aside.
- Add oil to a pan and sauté onions, garlic and bacon until browned.
- Add mince and brown. Add tomato puree and paste.
- Stir then add stock, stirring as you go. Allow this to simmer for 15 – 20 minutes.
- Heat a pan and toast almonds until golden and then bring a pot of water to the boil.
- Add baby marrow spaghetti.Turn off the heat and drain after 1 minute.
- Season then stir through halved cherry tomatoes.Spoon over mince.Sprinkle over toasted almonds.
