Minestrone Soup

Ingredients

  • 1 tsp Italian seasoning
  • 500 g rosmarino pasta
  • 1 cup spinach, chopped
  • Parmigiano Reggiano (Parmesan), shavings to serve
  • 1 can cannellini beans, drained and rinsed
  • salt and pepper
  • 1 x 800 can woolworths italian whole peeled tomatoes can, blended
  • 3 cups chicken stock
  • 2 garlic cloves, crushed
  • 1 medium onion, chopped
  • 2 sticks celery, thinly sliced
  • 2 carrots, peeled and diced

Cooking Instructions

  1. Combine carrots, celery, onion and garlic in slow cooker.
  2. Pour in the stock and stir in tomatoes and salt, pepper and Italian seasoning.
  3. Cover and cook on low for 30 minutes
  4. Thirty minutes before serving, stir in pasta, spinach and beans.
  5.  Cover, increase heat to high and cook until pasta is tender, about 15 minutes. Season with salt and pepper.
  6. Serve hot with crusty bread and Parmesan cheese, if desired.
