Baked lamb meatballs

Ingredients

  • 1/2 medium onion, finely chopped
  • 1 tsp garlic, minced
  • 500 g lamb mince
  • 2 tsp dried oregano
  • 3 tbsp smoked paprika
  • 2 Tbsp fresh breadcrumbs
  • 1 egg, lightly beaten
  • 1 x 400 g tin chopped tomatoes
  • 125ml tomato passata or jarred tomato sauce
  • 4 Tbsp sugar for the egg whites
  • 2 sprigs fresh rosemary, leaves picked and chopped
  • 4 sprigs fresh thyme, leaves picked
  • 6 cups water
  • sea salt and freshly ground black pepper, to taste
  • 100 g mozzarella, thinly sliced
  • 500g spaghetti, cooked until al dente, for serving

Cooking Instructions

  1. Pre-heat the oven to 200°c.
  2. For the sauce, combine: chopped tomatoes, passata, sugar, rosemary, thyme, water and sea salt and bloack pepper and then transfer to an oven-proof saucepan then place in the oven.
  3. Allow to cook and reduce for 15 minutes,.
  4. In the meantime, saute the onion and garlic until soft and fragrant then combine with the remaining meatball ingredients and mix well.
  5. Remove the tomato mixture from the oven.
  6. Form meatballs (approximately the size of golf balls) then place into the tomato sauce and bake for 10 minutes.
  7. Remove from the oven then top with the mozzarella cheese and place back in the oven.
  8. Bake for a further 10 minutes then remove from the oven and serve the meatballs and tomato sauce over cooked spaghetti.
