Easy, spicy Biryani

Ingredients

  • olive oil, to drizzle
  • 4 red onion, thinly sliced
  • 125 g seedless raisins
  • 2x15 g sachets Woolworths pilau rice spice blend
  • 1/4 tsp Turmeric
  • 4 chicken breasts, cubed
  • 560 g basmati rice, cooked
  • salt, to taste
  • Pomegranate rubies, to serve
  • yoghurt, tomato and coriander sambal, for serving

Cooking Instructions

  1. Heat the olive oil in a pan over a medium heat. Add the onion and cook until brown and soft. Add the raisins, pilau rice spice blend, turmeric and chicken, coating the chicken in the spice and browning. Add a little water if it sticks.
  2. Once the chicken is cooked, add the rice and toss through, coating it in the spice. Season with salt to taste.
  3. Garnish with the pomegranate rubies and serve with the yoghurt, tomato and coriander sambal.

FLAVOUR NOTE
Other delicious combinations are saffron and atchar.
