Traditional Malay samosas

Ingredients

  • 10 sheets phyllo pastry
  • 1/4 cup cold water
  • 700 g cake flour, sifted
  • 750 ml sunflower oil
  • 1 kg beef mince
  • 2 tsp olive oil, to drizzle
  • 1/2 large onion, chopped
  • 1.5 cm ginger
  • 2 Tbsp garam masala
  • 2 tsp curry powder
  • 1 tsp cumin
  • 3 tbsp coriander, ground
  • salt and pepper to taste
  • a handful fresh mint
  • 3 tbls coriander, chopped

Cooking Instructions

  1. Sauté the chopped onion in a medium pot until softened.
  2. Add the garlic and ginger and ground spices and cook for 2-3 min.
  3. Add the mince and cook for 10 min until cooked through and browed.
  4. Once the filling is cool, place 1 T of filling onto a pastry rectangle and roll as directed below.
  5. Deep fry in hot oil until golden, about 3 to 5 minutes
