Baked honey ricotta with golden kiwis

Ingredients

  • 3 Organic rooibos teabags
  • A handful fresh mint, to serve
  • a drizzle honey
  • 200 g sugar for the egg whites
  • 500 ml water
  • ricotta

Cooking Instructions

  1. Bake 250 g ricotta at 200°C for 15 minutes.
  2. Simmer 1 cup water, 200 g sugar, 2 T honey and 3 rooibos teabags for 15 minutes until syrupy, then strain.
  3. Spoon over the ricotta and serve with golden kiwis and fresh mint.
