Baked honey ricotta with golden kiwis

Ingredients
- 3 Organic rooibos teabags
- A handful fresh mint, to serve
- a drizzle honey
- 200 g sugar for the egg whites
- 500 ml water
- ricotta

Cooking Instructions
- Bake 250 g ricotta at 200°C for 15 minutes.
- Simmer 1 cup water, 200 g sugar, 2 T honey and 3 rooibos teabags for 15 minutes until syrupy, then strain.
- Spoon over the ricotta and serve with golden kiwis and fresh mint.
