Maple and ginger beef with noodles

Ingredients

  • 200 g Asian fine egg noodles
  • 1 limes,finely grated zest
  • 1 tbsp sesame seeds, toasted
  • A handful coriander leaves
  • 1/2 cup bean sprouts
  • 1 red onion, thinly sliced
  • 100 g baby pak choi
  • 3 Tbsp olive oil, to drizzle
  • 3 x 150 g free-range sirloin steaks, thinly sliced
  • 2 Tbsp fresh ginger
  • 4 tbsp soya sauce
  • 1 tbsp maple syrup

Cooking Instructions

  1. Mix together the maple syrup, soya sauce, ginger and the sirloin strips and marinate for 20 minutes.
  2. Cook the noodles according to the instructions, then drain and coat them with a little oil to prevent sticking.
  3. Remove the sirloin from the excess marinade and fry the strips in a smoking hot pan for 1 minute on each side. Set aside.
  4. Add olive oil to the pan with the leftover marinade and stir fry the pak choi and sliced onion for 1 minute.
  5. Add the noodles, bean sprouts and sirloin strips and toss them all together.
  6. Sprinkle with the chopped coriander and sesame seeds, and serve while still hot with lime wedges on the side.
