Chicken with smashed peas & beans

Ingredients

  • Rainbow peppercorns, to garnish
  • 140g fresh peas
  • 120 g broad beans
  • olive oil, to drizzle
  • 1 large lemon, zested (optional)
  • sea salt and milled pepper
  • 4 chicken breast fillets, chopped into cubes
  • 1 tsp fresh mint, to serve

Cooking Instructions

  1. Blanch the peas and broad beans. Using a fork, gently mash the peas and beans with the olive oil, mint and lemon juice. Season to taste.
  2. Place the chicken breasts in a sieve and suspend over a saucepan of simmering water. 
  3. Cover and simmer for 5 minutes, turn and cook for a further 5 minutes.
  4. To serve, place the peas in a bowl, slice the chicken breasts into pieces and place on top of the peas. Sprinkle with peppercorns and mint.
