Bacon-wrapped asparagus with soft eggs

Ingredients

  • 8 rashers streaky bacon, parcooked
  • 8 asparagus spears
  • 4 Free-range eggs, beaten
  • sea salt and freshly ground black pepper, to taste

Cooking Instructions

  1. Pre-heat the oven to 200°c.
  2. Wrap the bacon around the asparagus and place on a non-stick baking tray.
  3. Place the tray in the pre-heated oven and allow to roast for 10-15 minutes until golden brown and cooked through.
  4. In the meantime, fry/poach the eggs to your preference.
  5. Serve the bacon-wrapped asparagus with the soft eggs seasoned to taste.
