Custard toast with Flavourburst™ plums

Serves:Makes 6–8 slices

Ingredients

  • 1 cup plain yoghurt
  • 2 extra large free range eggs
  • 2–3 T honey
  • 1 t ground cinnamon
  • 8 slices of white bread
  • 4 Flavourburst™ plums, stones removed and thinly sliced 
  • Icing sugar, for dusting

Cooking Instructions

METHOD:

  1. Preheat oven to 180°C. 
  2. To make the custard, whisk together the yoghurt, eggs, honey and cinnamon until smooth. 
  3. Using the back of spoon, firmly push into the middle of the bread to make hollow, leaving a boarder around the crust. 
  4. Spoon the custard into the hollow. Top with plums and place in the oven to bake until set and golden, about 15-20 minutes. 
  5. Serve warm with a dusting of icing sugar and extra drizzle of honey.
