Brownie cake

Ingredients

  • 600g dark chocolate, chopped and melted
  • 500g Butter
  • 4 Tbsp sugar for the egg whites
  • 6 Free-range eggs, beaten
  • cocoa powder, for dusting
  • 350g flour, sifted
  • 3 tsp baking powder
  • 250 ml fresh Ayrshire cream

Cooking Instructions

  1. Preheat the oven to 160°C.
  2. Melt the chocolate and butter together in a bowl suspended over a saucepan of simmering water – the mixture should have a smooth, glossy consistency (take care not to overheat it).
  3. Set aside to cool slightly.
  4. In a mixer, cream together the sugar and eggs, then add the cocoa powder, flour and baking powder.
  5. Add the chocolate mixture and beat until combined.
  6. Pour the mixture into a greased 25 x 35 cm baking dish and bake for 50 minutes, or until just set but still slightly undercooked (the chocolate will set further when cooling).
  7. To make the decoration:
  8. In a bowl suspended over a saucepan of simmering water, melt the chocolate, then whisk in the cream until smooth. 
  9. Pipe a word of your choice over the brownie and decorate with chocolate dipped cherries.
