Zucchini fritters

Serves:Make approximately 20 fritters

Ingredients

  • 2 tsp baking powder
  • 6 sliced baby marrows, grated
  • A pinch salt
  • 50 g flour
  • 1 egg
  • 1 cup full-cream milk
  • 2 Tbsp melted butter or extra vigin olive oil
  • lemon wedges, for serving

Cooking Instructions

  1. Sift together the flour, baking powder and salt.
  2. In a separate bowl, whisk together the egg, milk and butter.
  3. Pour the liquids into the flour mixture and mix until smooth.
  4. Fold in the baby marrow.
  5. Fry spoonfuls of the mixture in a non-stick frying pan until golden brown on both sides and cooked through.
  6. Serve with lemon wedges.
