Anchovy and warm cannellini bean salad

Ingredients

  • 4 Tbsp gherkins, finely chopped
  • 6 anchovy fillets, roughly chopped
  • 1 tsp italian parsley or micro herbs, chopped
  • 10 g basil
  • 4 Tbsp mint, finely chopped
  • 1 Tbsp baby capers
  • lemon juice to taste
  • sea salt and freshly ground black pepper, to taste
  • 1 can cannellini beans, drained and rinsed
  • 300 g Swiss chard
  • 1 cup rosa tomatoes
  • 2 chopped tomatoes
  • 1 medium red onion, sliced thinly
  • 1/2 cup extra virgin olive oil, plus extra for drizzling

Cooking Instructions

  1. Place 2–3 T of the salsa verde dressing in a small saucepan with the drained cannellini beans and toss over a medium heat for 1–2 minutes.
  2. Remove from the heat and place in a large bowl with the remaining ingredients.
  3. Serve immediately, drizzled with extra virgin olive oil.
