Mexican-style mince

Ingredients

  • guacamole, for serving
  • 1 spring onions, chopped, to garnish
  • sour cream, to serve
  • 2 Sweetcorn cobs
  • 3 tbsp organic chicken stock
  • 1/2 red chilli, finely chopped (optional if you're cooking for kids)
  • 1/2 red pepper, diced
  • 2 garlic cloves, chopped
  • 1/2 red onion, finely chopped
  • sea salt and freshly ground black pepper, to taste
  • 1 tbsp ground coriander
  • 1 tsp smoked paprika
  • 2 tsp ground cumin
  • 500 g Woolworths free-range beef mince
  • 2 tbsp sunflower oil

Cooking Instructions

  1. Heat the oil in a pan over a medium heat.
  2. Pan-fry the mince until brown. Add the cumin, smoked paprika, coriander and season to taste.
  3. Add the onion, garlic, red pepper and chilli to the pan.
  4. Simmer for 15 minutes – if the mixture is too dry, add the chicken stock.
  5. Blanch the sweetcorn in salted boiling water until tender, then char on a griddle pan.
  6. Serve the mince and corn with sour cream and ready-made guacamole.
  7. Garnish with spring onion.
