Lentil, coriander & chilli salad

Ingredients

  • 2 x 400 g cans lentils, drained and rinsed
  • 200 g cauliflower florets
  • 2 red chillies, seeded and finely chopped (optional, to serve)
  • A handful coriander, chopped
  • 2 Tbsp chives
  • 4 Tbsp olive oil, to drizzle
  • sea salt and freshly ground black pepper, to taste
  • 1 dollop fat-free yoghurt

Cooking Instructions

  1. Add the lentils, cauliflower, chilli, coriander and chive, lemon juice and olive oil to a bowl and mix to combine.
  2. Season to taste, drizzle over the Greek yoghurt and serve.
