Ingredients
- 2 x 400 g cans lentils, drained and rinsed
- 200 g cauliflower florets
- 2 red chillies, seeded and finely chopped (optional, to serve)
- A handful coriander, chopped
- 2 Tbsp chives
- 4 Tbsp olive oil, to drizzle
- sea salt and freshly ground black pepper, to taste
- 1 dollop fat-free yoghurt

Cooking Instructions
- Add the lentils, cauliflower, chilli, coriander and chive, lemon juice and olive oil to a bowl and mix to combine.
- Season to taste, drizzle over the Greek yoghurt and serve.
