Sticky pork ribs with potato salad

Ingredients

  • 1 Kg pork rib rack
  • 250ml Woolworths sticky rib marinade
  • 125ml Greek-style yoghurt
  • juice of one lemon
  • 2 tsp Dijon mustard
  • 500g fingerling potatoes, boiled (alternatively, use baby potatoes)
  • 1 bulb fennel, halved lengthways
  • 100g radishes, quartered
  • chives
  • sea salt, to taste
  • freshly ground black pepper, to taste

Cooking Instructions

  1. Braai the ribs over an open fire, basting regularly with the marinade.
  2. Combine the yoghurt, lemon juice and mustard, then toss with the remaining ingredients to make the potato salad.
