Bean, corn & spinach quesidillas

Ingredients

  • 6 soft flour tortillas
  • 250 g mozzarella, grated
  • 4 whole, grilled corncobs
  • 1 x 400 g tin red kidney beans
  • 100 g baby spinach
  • 1 jar chunky salsa

Cooking Instructions

  1. Heat a large non-stick pan/griddle pan over high heat.
  2. Place one wrap in the pan then top with a third of all the ingredients (cheese, corn, beans and spinach).
  3. Allow to grill and for the cheese to melt then very carefully flip it over and allow to toast for another few minutes until both sides are golden brown.
  4. Carefully remove the filled wraps from the pan then continue with the remaining ingredients.
  5. When you are ready to serve, slice the quesidillas into wedges and serve with the chunky salsa.
