Cajun pumpkin and grape salad

Serving Suggestion:Serve charred pumpkin with the grape salad

Ingredients

  • 1 small pumpkin, skinned and cut into slices
  • 3 tbsp extra virgin olive oil
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tsp cayenne pepper
  • salt and freshly ground black pepper
  • woolworths white grapes, halved
  • 1/2 small brocoli, cut into small pieces
  • 100 g almonds toasted, roughly chopped
  • 1 tbsp pumpkin seeds
  • 1 tbsp sesame seeds
  • 1 lemon, zested and juiced
  • 4 tbsp parsley, roughly chopped
  • 4 tbsp plain yoghurt

Cooking Instructions

  1. Arrange the pumpkin wedges on a roasting tray
  2. Coat with olive oil, paprika, cumin, coriander, cayenne pepper, salt and black pepper
  3. Roast in the oven for 35 – 40 minutes until tender and charred
For the salad:
  1. Halve the grapes and place in a salad bowl
  2. Cut the broccoli into small pieces and add to the grapes
  3. Add toasted almonds, pumpkin seeds, sesame seeds and chopped parsley
  4. Add the juice and zest of one lemon
  5. Spoon in the yoghurt
  6. Season to taste
  7. Stir the salad to combine
