A palmier is a flaky pastry shaped like a palm leaf. These crisp layers of all butter French-style pastry has a hint of sweetness. Time is taken to fold the dough and allow it to rest to create the delicate layers of pastry which is then hand cut, slowly baked and packed by hand.
